Ingredients

Method

  1. 01

Mix all the dry ingredients in a bowl, breaking up any lumps of sugar.

  2. 02

Pat the chicken or paneer dry, brush lightly with oil and coat evenly with the rub.

  3. 03

Rest for 30 minutes at room temperature, or up to 6 hours covered in the fridge.

  4. 04

Grill over high heat until charred at the edges and cooked through. Rest for 5 minutes and serve with lime.

Mix powders gently and keep your face away from the bowl. Ghost Pepper powder becomes airborne easily.
